Make yourself a dang peach, chicken and Brie quesadilla!

I found this recipe originally on Pinterest, but it was pretty bland. So I decided to put my own spin on it.

Here are my humble servants for the evening. They gave their lives that I might have dinner. (I’M HUNGRY OK. MY BRAIN CAN’T FUNCTION PROPERLY RIGHT NOW.)

All measurements are kind of according to whatever you feel like. Because that’s how I roll.


1. 1/2 to 3/4 of a peach
2. Chicken
3. A dash of jalepeno
4. Red onion
5. Cheddar cheese
6. Brie cheese
7. Olive oil
8. Oregano
9. Paprika
10. Cumin
11. Tortillas
12. Honey (not pictured. I forgot)
13. One clove garlic

Dice and slice everything up nice and good. Make sure the peach is sliced pretty thin. Heat up some olive oil in a skillet.

Sauté the garlic, onion and peaches until the peaches are kind of brownish and crispy on the outside.

Near the end I added the chicken to sauté for a couple minutes to absorb some of the sauté flavor. I already had mine baked because its healthier to bake it rather than sauté it, but sautéing it from raw with the onions and peaches would probably be tastier.

(I threw some seasonings on the chicken.)
Then put everything on a paper towel to drain.

Assemble the quesadilla on top of a tortilla in a clean skillet! Drizzle some honey on top if you want.


Put another tortilla on top.

Cook until its nice and crisp on both sides, flipping as necessary.
